Well,that make sense. granite can be hurt easier by knife.
Have you wash away stains ??
Try to use special detergent.It works.
Just letting it sit and, I assume, the moisture slowly evaporating, has greatly improved it. I would guess in another week all signs of the stain will have disappeared.
