Both Tennessee Whiskeys and Bourbons may or may not use sour mashes. The only difference between Tennessee and Bourbon, AFAIK, is that Tennessee Whiskeys are (maple) charcoal filtered, and Bourbons are not. (I think that the actual legal difference may solely be that one is distilled in Tennessee and the other is not, but the charcoal is the difference people have come to expect.)
