I've got two email accounts, is it possible to have all the SENT items from one account automatically sent to a sub folder in SENT ITEMS?

I think I can fairly definitively say no if they are POP3 accounts since all incoming mail goes in to one Inbox and thus there is only one Sent Items. You could manually sort every week or so by sorting by "From" since From will show which account you used to send the mail.

If they are IMAP (or at least one is), the accounts each have their own Sent Items directories.

I don't think you can create a rule on the Sent Items folder either.
