For ftp/sftp, would you use Fetch, Transmit, or something else?

For opening Word and Excel docs, Office 2008, Office 2011, Open Office, or something else?

ftp, I don't use heavily, so command line usually does it. for me Cyberduck is worth a look in the free category. Though Transmit looks to be the way to go for a great app if you use FTP a lot.

Word and Excel, I use iWork from Apple. Again my use here isn't heavy, if you need absolute 100% compatibility, Office 2011. If you are just opening, I think the OS handles both to some extent.

I tend to use the command line for file transfers. ISTR having a preference for one of the GUI apps, but I use it so infrequently that I forget which it was.

I use NeoOffice. It's pretty much the same codebase as OpenOffice, but it was ported to native Mac APIs way before the official OpenOffice was. There's probably not a lot of difference either way. I hear that if you donate to the NeoOffice guy, his support is incredible. Also, I have a problem where OpenOffice freaks out, apparently because of Zooom/2.
